Dark Chocolate Raspberry Yogurt Parfait

Breakfast is by far my favorite meal of the day. Dark chocolate is by far my favorite dessert. Breakfast and dark chocolate together??? In one meal??? Yes my friends, it is true. This parfait is one of my favorites and can convince even the grouchiest of morning-haters to start their day early.

I started out with Greek Chobani yogurt. Any yogurt will do, but Greek is a great option because it is high in protein (a typical serving contains 15-20 grams of protein, the same ammount as 2-3 ounces of lean meat) without packing on the carbs. This high protein content also leavs you feeling fuller longer! Chobani is my favorite brand becuse it’s not too sugary sweet and tastes very natural. For this recipie I used the peach flavor, but I would also suggest vanilla or lemon.

Now the fun part: granola. Granola is a great way to add a healthy crunch to any breakfast. Natural granola is packed full of vitamins and minerals such as potassium, zinc, phosphorus, magnesium, calcium, vitamin-E, vitamin-C, niacin, and vitamin E to name just a few. It can also aid in digestion, lower cholesterol, and even reduce anemia. I love using Kind granolas, they are all natural and taste delicious! I added a handful (about 1/3 of a cup) to the yogurt.

To top off the granola I cut up about 10 raspberries and a square of 70% cocoa dark chocolate. As far as chocolate goes, the darker the better. It is full of antioxidants, can lower blood pressure, prevent the formation of blood clots, and has been proven to reduce stress (something I can attest too!). The trick is staying away from super sugary brands like Hershey’s and going straight for the good stuff. Pure dark chocolate is expensive, but it reminds you to eat in moderation and make it last!

Toss it all together in a bowl and voilà! A delicious breakfast that will keep you feeling full until lunch and fuel your mind and body for a busy day.
