Think Pink: Coconut Raspberry Smoothie

In addition to ghosts, pumpkins, and trick-or-treating, October is recognized across the country as breast cancer awareness month. Almost everyone has in some way been touched by this disease, and I am joining a group of friends in a 6-mile walk next week to fund raise for further research. With all of the preparation involved (yes, that does mean buying pink face paint and knee socks…) I got to thinking about what else I could do to show my support when quickly pulling together breakfast one morning and it hit me: why not pink-ify my food?! The result was this pink smoothie: all-natural, free of refined sugar, and with only three ingredients. Here’s to eating healthy with a cause! 
The first thing you will need is a 5.3 oz container of coconut flavored Chobani yogurt. These yogurts are made with all natural, GMO-free ingredients and pack a high nutritional value into a portable snack. I always use Greek yogurt over regular because it contains almost double the protein and half the sugar content! Not to mention, the thicker texture will make for a more filling smoothie.

 The second ingredient is ¾ of a cup of unsweetened almond milk. Feel free to add more or less depending on how you want the consistency of your smoothie, or blend it with water! Almond milk is low in fat, but high in everything our body needs: calcium, iron, protein, potassium, and vitamin C. It is rich in vitamin E which strengthens skin and prevents wrinkles, and helps strengthen bones and the cardiovascular system. Drinking natural almond milk is just like adding almonds to a smoothie! Watch out for the sweetened versions, the added sugar will detract from the nutritional value this drink provides.


Finally, our last ingredient is frozen raspberries! You can of course use fresh raspberries if you have them on hand, I personally prefer the frozen ones because they give my smoothies a cold icy kick. Raspberries are a delicious source of antioxidants and vitamins that will boost immunities and keep you healthy all year around. Surprisingly, they contain a good amount of dietary fiber to keep your hunger at bay, and the sugar raspberries add to a smoothie is 100% natural so your body can break it down slowly over time. This prevents the “highs” and “lows” you feel in energy levels when eating a diet rich in refined sugars and sweeteners. In any case, I think I like any fruit that makes my smoothie such an appetizing shade of pink!

  
Ingredients:

5.3 oz coconut Greek yogurt

¾ cup unsweetened almond milk

¾ cup frozen raspberries
