Math has never been my favorite subject, but I won’t deny that chocolate+peanut butter is one equation to which I would never object. Based on the popularity of Reese’s cups at my house on Halloween among the trick-or-treaters, I would say I am not alone in this opinion. Chocolate peanut butter cups don’t have to be an indulgence, however. Would you believe me if I told you that homemade peanut butter cups are incredibly easy to make, uber delicious, and even…good for you? Healthy eating is all about paring food down to it’s most natural and simple form. Therefore, there are only two ingredients in these peanut butter cups: chocolate and peanut butter of course! You will need 1.5 cups of dark chocolate. The higher percentage the cocao, the better! If chocolate is high in cocao, it means that there is less room for added sugar and more of the nutrients that dark chocolate has to offer. In small quantities, dark chocolate is really not that bad for you. It is high in antioxidants and releases natural feel-good hormones in your body! Heat up 1 cup of chocolate in the microwave until it is completely melted (about 45 seconds). Pour about 1/4 inch of chocolate into an ice cube tray, the dark chocolate should fill 14 ice cube cups.
Next up is the peanut butter! I used completely natural peanut butter in my pub cups. Click here for the link to my post on how to make this easy, one ingredient peanut butter! If you don’t have any raw peanuts on hand to make homemade peanut butter, feel free to use any natural peanut butter you have avaliable. Place a small dollop of peanut butter on top of the center of the chocolate in each ice cube slot. Peanut butter is a natural source of heart-healthy fats, especially when there are no added fats or oils!
Heat up the other 1/2 cup of dark chocolate and layer it on top of the peanut butter. Freeze the cups for about 2 hours until they are hard and pop the pub cups out of the ice cube tray (you might have to tap on the tray when it is upside down for them to come out). Enjoy your delicious treat! Store in the freezer for up to 2 weeks.
- Ice cube tray
- 1.5 cups dark chocolate
- All natural peanut butter
1. Melt chocolate for about 45 seconds in the microwave
2. Pour half evenly in the bottom of the ice cube sections
3. Add about a teaspoon of peanut butter to the center of the chocolate
4. Pour the remaining chocolate over the peanut butter and freeze for 2 hours
5. Enjoy! Store leftovers (unless you eat them all…which might very well happen…) in the freezer.
